Florence fennel recipe 3

FLORENCE FENNEL SALAD

1 medium fennel bulb

½ or 1 small red onion

2 tablespoons capers

small handful mint leaves

lettuce or rocket or baby spinach

DRESSING:

3 tablespoons olive oil

1 tablespoon lemon juice

1 clove garlic, crushed

sea salt and freshly ground pepper

 

Add all dressing ingredients to a small jar and shake well.

SALAD:

Finely slice red onion.  Soak in a bowl of cold water for 5 minutes, then drain.  Finely slice the fennel bulb.  Put fennel, capers and onion in a small bowl.  Add dressing and spoon through.

To serve, place greenery on the base of a plate and spoon the fennel mix over the top.  Decorate with the mint.

A crunchy, fresh salad that goes with everything!
